Pico de Guac

I am not a particularly large fan of Pico de Gallo, but I do enjoy its easy make easy eat quality and its chunky texture. However, I am a huge fan a Guacamole! I can’t seem to get my hands and mouth on enough Avocados when they come in season (according to my South Carolinian colleagues us “west coast people” are strange for liking it)– I buy four or more of these omega-3 fatties at a time! I won’t make you wait, I already ate half of what I was talking about, here is the recipe:


Pico de Gauc

Ingredients

  • 1 Roma Tomato, deseeded and cubed.
  • 1/2 White Onion, cubed
  • 1 Avacado, cubed
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • ~1 tbsp lime juice

Directions

  1. Mix
  2. Eat

Double, triple, etc the recipe as needed.

I plop a large helping of my Pico de Guac on a tower of saltfree saltines, pepper jack cheese, and smoked salmon dipped gently in hot wing sauce…then try my best to shovel the whole thing in my mouth at once. Repeat. Repeat…repeat….repeat…
