Individual Pancake

Sometimes… you just need a pancake. You don’t want to make an entire batch to share, and you don’t have the ready-made mix. What to do? Well, single pancakes are very easy to make, and here is a simple recipe for those mornings (or afternoons… in my case).


  • 1/2 cup flour
  • 1 tbsp sugar
  • 1 tsp baking soda
  • 1/2 tsp salt

Add these into a little plastic tupperware/cereal bowl. Wisk heartily.

  • 1/2 cup milk
  • 2 tbsp egg whites (or 1 egg, beaten)
  • 1 tbsp oil

I just add the liquid ingredients directly on top of the dry. Wisk wisk wisk.

Pour onto a griddle, cook until done–lightly browned on each side. This will make either 1 big pancake, or 2 medium ones.
