Bacon, Egg, and Cheese Cups!

It was one of my new years resolutions to try at least 20 pinterest pins (and also to lose weight, but that’s later on the To Do list)–because I use that website so much, and should at least make use of the ideas. I saw a picture (sadly, with no link) of bacon cups and figured I could puzzle-out the recipe. This turned out egg-cellant (ya, I know–haha)!


Here it is:

Pre-heat oven to 350 degrees.

Spray cupcake sheet with non-stick spray.

Layer in

  • 1 piece of bacon, cut in half (or 1.5 pieces if your bacon isn’t very thick)

Crumble

  • 1″ cube of queso fresco

Mix the queso fresco with

  • 1/4 tsp of chili garlic sauce (more to taste)

Plop in

  • 1 Egg
  • Ground Black Pepper

Bake for appx 15 minutes. Egg yolk might still be runny, but whites should not be runny. Top with diced green onions if you desire.
