Tabouli is essentially a middle eastern chopped salad, you might also consider it a type of pico de gallo.
I wanted to eat middle eastern food and tacos at the same time…so I decided to make tacos inspired by tabouli. They are light, easy, cheap, and a refreshing summer meal.
1/4 lb beef sirloin, sliced thinly
cook and cool the beef
1 bunch parsley, finely chopped (the finer, the better)
2 Roma tomatoes, deseeded and finely diced
1/4 white onion (or 1/2 if its med to small), finely diced
3 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon sugar
1/4 teaspoon paprika (I use smoked paprika)
Mix everything, including the cooled beef, together. Chill or serve immediately. Serve wrapped in mini (6″) tortillas of your choice
