Blini (Savory Buckwheat Crepe)


Another dish in honor of the Sochi Olympics. I love a good savory crepe!

Adapted from the following recipes: burczymiwbrzuchu, The New York Times, and the Food Network.

Toppings (you can be inspired here, but this is what I used):

  • Salmon Lox
  • Sour Cream
  • Avacado
  • Green Onions


Add the following together:

  • 3/4 cup all purpose flour
  • 1/2 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1 tsp salt


Add and mix

  • 1/2 stick (4tbsp) melted butter

In a separate bowl mix, then add:

  • 1 tsp sugar
  • 2 eggs

Finally mix in

  • 1 cup of milk (warm)

I have a dosai pan I use when I make crepes (or dosai, obviously) so I use that here. If you have a pan you typically use for pancakes, that should work. Heat and cook, use some sort of spray oil if your pan isn’t good about not sticking. I made them larger than the one I chose to take a picture of, I rolled the topping up inside and sorta….ate way to many.
