Sbiten is a Russian mulled honey drink, and it’s very tasty. I can easily see adding some spirit to this if you want to make it hard. I am making it because of the Sochi Olympics.
- 6 cups water (or more if you don’t want it as sweet)
- 1/2 cup honey
- 1/2 cup blackberry jam
(preferably seedless jam, but I just got Organic jam from Safeway because there isn’t high fructose syrup in it–you strain it anyways, so the seeds aren’t a big problem)
- 2-4 cinnamon sticks
(I did four because mine were small stubby things)
- 2 tsp whole cloves
- 1 tsp cardamon powder
- pinch salt (1/8 tsp)
- 1 tbsp mint leaves (1 tsp dried)
- 1″ fresh ginger
Bring to a simmer (low boil), simmer for 30 minutes. Chill.
Note: You can also add more water if you want it less-sweet.
