If you want to pretend apple pie is healthy for you, there is no crust in this version, so technically… Low Carb Apple Pie! Instant health food. You’re welcome.

I kept forgetting to take pictures of the cooked versions…because I ate them THREE times…

Individual Apple Pies

Preheat oven to 350°F degrees

  • 1 Apple

Cut off the top and scoop out the interior. Discard rough seed area, and roughly chop the remainder and place in a bowl. Mix in:

  • 2 tbs brown sugar
  • 2 tsp flour
  • 1/4 tsp cinnamon
  • 1/8 tsp (or pinch) nutmeg
  • splash of lime/lemon juice

Stuff the apple with the mixture and place it on a cooking sheet or in a cupcake tray.

Cover the apple with aluminum foil. Repeat for as many apples as desired.

Bake for 30-45 minutes, allow to cool.
