Carrot Halwa

Carrot Halwa is a simple kind of wanna-be carrot fudge. It’s like taking carrot cake and getting ride of all the cake and leaving behind a warm gooey carrot filling. In fact, carrot halwa would probably take carrot cake to an entirely different level. Come to think of it… I’ll have to make a carrot halwa cake next chance I get.

Right now I’m freezing the extras so I can make stuffed pancakes.

Carrot Halwa

Special Ingredients: Cardamon
Special Tools: Grater (or blender or food processor)

In a skillet on medium heat, add:

  • 2 tbsp of butter (or ghee)
  • 2 tbsp of finely crushed/chopped almonds (I use salted)

When almonds are browned (2-3 minutes), add:

  • 3 cups grated carrot (I pulse in my blender until it is a fine grate)
  • 1/2 tsp cardamom powder

Cook for 4  minutes to allow carrots to warm through and add:

  • 2 1/2 cups milk
  • 1/2 cup milk w/ 1 tsp of lemon juice mixed in

Heat milk (2-3 minutes), then add:

  • 1 cup sugar

Simmer for 20-30 minutes until thick and gooey. Serve warm or cold.
